Warm potato chips with Parmesan and herbs are a flavorful twist on a classic snack, combining the irresistible crunch of kettle-cooked potato chips with a savory blend of herbs and seasonings. For this quick and easy upgrade to store-bought potato chips, the chips are spread onto a baking sheet and topped with a mix of Parmesan cheese, fresh sage or thyme, chives, lemon zest, and garlic powder before being baked until golden. Perfectly warm and seasoned, these chips are an elevated snack that's sure to impress, even if they do only take 15 minutes to make.

Warm Potato Chips with Parmesan and Herbs Variations

Store-bought kettle-cooked potato chips are a convenient base for this irresistible, flavor-packed snack. To make warm potato chips with Parmesan and herbs, you'll need:

  • Salted kettle-cooked potato chips: The crisp, crunchy base for the recipe. You can also use regular potato chips or homemade chips if preferred.
  • Finely grated Parmesan cheese: For a cheesy, umami-rich flavor. Grated Pecorino Romano or Asiago can be used in its place for a unique flavor.
  • Fresh sage or thyme: For an herbal addition that complements the savory flavors. While dried herbs can also be used, fresh herbs add a more vibrant color and flavor. You can also use parsley or other herbs, as desired.
  • Fresh chives: For a pop of freshness and oniony flavor.
  • Lemon zest: A bright, citrusy touch to wake up the flavors.

Ingredients

  • 1 (8- to 9-ounce) bag salted kettle-cooked potato chips

  • ½ cup plus 2 tablespoons finely grated Parmesan cheese

  • 1 ½ tablespoons chopped fresh sage or thyme

  • ¼ cup chopped fresh chives

  • 2 teaspoons lemon zest

  • 1 teaspoon garlic powder

Directions

  1. Prepare Oven and Pan

    Preheat oven to 425°F. Arrange potato chips in a single layer in a 15x10-inch baking pan.

  2. Sprinkle with Topping

    In a bowl combine 1/2 cup Parmesan, the sage, 1 Tbsp. chives, the lemon zest, and garlic powder. Sprinkle over chips.

  3. Bake and Serve

    Bake 5 minutes or until starting to brown. Sprinkle warm chips with remaining 3 Tbsp. chives and remaining 2 Tbsp. Parmesan. Serves 12.

To store leftover potato chips, cool completely, then transfer to an airtight container or zip-top bag. Store in a cool, dry place for up to a week. To crisp them up, you can pop them into a preheated 350°F oven until hot and crisp before serving.
